8 oz. penne pasta

1 tablespoon olive oil

1 small onion, diced

2 cloves garlic, minced

1 can (4 oz.) diced green chilies

1 cup cream cheese, softened

1 cup shredded cheddar cheese

1 cup shredded Monterey Jack cheese

1 cup low-sodium chicken broth

1 teaspoon ground cumin

1 teaspoon smoked paprika

1/2 teaspoon salt

1/4 teaspoon black pepper

1/2 cup fresh cilantro, chopped (for garnish)

Sliced jalapeños (optional, for garnish)

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the penne pasta according to package instructions until al dente. Drain and set aside.

    Sauté Aromatics: In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté for about 5 minutes, until translucent. Stir in the minced garlic and cook for another minute until fragrant.

      Add Chilies and Spices: Stir in the diced green chilies, ground cumin, smoked paprika, salt, and black pepper. Cook for 2 minutes to allow the flavors to meld.

        Make Cheese Sauce: Reduce the heat to low. Add in the softened cream cheese, chicken broth, and both cheddar and Monterey Jack cheeses. Stir continuously until the cheeses melt and form a creamy sauce, about 3-5 minutes.

          Combine Pasta and Sauce: Add the cooked penne pasta to the skillet, tossing to combine the pasta with the cheese sauce. Cook for an additional 2-3 minutes, warming everything through.

            Serve: Remove from heat and garnish with chopped cilantro and sliced jalapeños if desired. Serve hot and enjoy!
