2 cups cooked chicken, shredded

1 cup Hatch green chilies, diced (fresh or roasted)

2 cups shredded Monterey Jack cheese

1 cup shredded cheddar cheese

1/2 cup cream cheese, softened

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon ground cumin

1/2 teaspoon smoked paprika

8 large flour tortillas

1/4 cup fresh cilantro, chopped (optional)

Olive oil or cooking spray, for frying

Sour cream and salsa, for serving

Instructions
 

Prepare the Filling: In a large mixing bowl, combine the shredded chicken, diced Hatch green chilies, Monterey Jack cheese, cheddar cheese, cream cheese, garlic powder, onion powder, cumin, and smoked paprika. Mix well until all ingredients are evenly incorporated.

    Assemble the Quesadillas: Lay a tortilla flat on a clean surface. Spoon a generous amount of the chicken filling onto one half of the tortilla, leaving a little space around the edge. If desired, sprinkle fresh cilantro on top. Fold the tortilla over the filling to create a half-moon shape.

      Heat the Pan: In a large skillet, heat a tablespoon of olive oil over medium heat. If using cooking spray, coat the skillet evenly.

        Cook the Quesadillas: Once the skillet is hot, carefully place the folded quesadilla in the pan. Cook for about 3-4 minutes on one side until golden brown and crispy. Flip the quesadilla carefully using a spatula and cook the other side for another 3-4 minutes, ensuring the cheese is melted and the tortilla is golden brown.

          Repeat: Remove the quesadilla from the skillet and place it on a plate. Repeat the process with the remaining tortillas and filling, adding more oil to the skillet as necessary.

            Slice and Serve: Cut each quesadilla into wedges and serve immediately with sour cream and salsa on the side for dipping. Enjoy the cheesy goodness!
