Ingredients
  

2 cups mashed potatoes (preferably leftover or cooled)

1 cup shredded sharp cheddar cheese

1/2 cup grated Parmesan cheese

1/4 cup sour cream

2 large eggs

1/2 cup green onions, finely chopped

1 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and pepper to taste

1 cup breadcrumbs (panko or regular)

Cooking spray or oil for frying

Instructions
 

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

    In a large mixing bowl, combine the mashed potatoes, sharp cheddar cheese, Parmesan cheese, sour cream, and eggs. Mix until well blended.

      Stir in the green onions, garlic powder, onion powder, salt, and pepper. Ensure the mixture is smooth and creamy.

        Using a tablespoon or a small ice cream scoop, form the mashed potato mixture into small balls, about the size of a golf ball.

          Roll each ball in the breadcrumbs until well coated, pressing gently to ensure the crumbs stick.

            Place the coated mashed potato puffs on the prepared baking sheet, spacing them a couple of inches apart.

              Lightly spray the tops with cooking spray or drizzle a little oil for added crispiness.

                Bake in the preheated oven for 20-25 minutes or until golden brown and crispy on the outside.

                  Once done, remove from the oven and let them cool for a few minutes before serving.
