Cheesy Pulled Pork Stuffed Sweet Potatoes

4 medium sweet potatoes

2 cups cooked pulled pork (preferably with BBQ sauce)

1 cup shredded cheddar cheese

1/2 cup sour cream

1/4 cup chopped green onions

1/4 teaspoon garlic powder

1/4 teaspoon smoked paprika

Salt and pepper to taste

2 tablespoons olive oil

Fresh cilantro for garnish (optional)

Preheat Oven: Preheat your oven to 400°F (200°C).

    Prepare Sweet Potatoes: Wash and pierce the sweet potatoes several times with a fork. Rub each potato with olive oil and sprinkle with salt. Place them on a baking sheet and bake for 45-60 minutes, or until they're tender when pierced with a fork.

      Prepare Pulled Pork: While the sweet potatoes are baking, prepare your pulled pork if not already done. Mix the shredded pulled pork with garlic powder, smoked paprika, and a little extra BBQ sauce for flavor enhancement.

        Mix Cheese and Sour Cream: In a small bowl, combine the shredded cheddar cheese with sour cream, and mix well. This will add creaminess to the stuffing.

          Stuff Sweet Potatoes: Once the sweet potatoes are fully cooked, remove them from the oven and let them cool slightly. Slice each potato open lengthwise and gently scoop out some of the flesh to make room for the filling.

            Assemble: Fill each sweet potato with a generous portion of the pulled pork mixture followed by a heaping spoonful of the cheese-sour cream mixture.

              Melt the Cheese: Return the stuffed sweet potatoes to the oven for an additional 10-15 minutes, or until the cheese is bubbly and golden.
