1 cup corn kernels (canned or frozen)

1 tablespoon olive oil or butter (for grilling)

1 teaspoon garlic powder

1 teaspoon chili powder

1 teaspoon cumin

Prepare the Filling: In a large mixing bowl, combine the shredded cheddar and mozzarella cheeses, cooked chicken (if using), bell peppers, onions, corn, garlic powder, chili powder, cumin, salt, and pepper. Mix well to ensure an even distribution of all ingredients.

    Assemble the Quesadillas: Place a tortilla on a clean surface. Spread a generous amount of the cheese filling over half of the tortilla. Fold the other half over to create a half-moon shape. Press down gently to hold the filling in place. Repeat this process for the remaining tortillas.
