Ingredients

1 lb (450g) boneless, skinless chicken breasts, cut into bite-sized pieces

2 cups broccoli florets (fresh or frozen)

1 cup shredded cheddar cheese (plus more for topping)

1 cup ranch dressing

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

Salt and pepper to taste

1/2 cup chicken broth (low sodium)

Instructions

Cook the Chicken: In a large skillet, heat the olive oil over medium-high heat. Add the chicken pieces and season with garlic powder, onion powder, paprika, salt, and pepper. Cook for about 5-7 minutes, or until the chicken is golden brown and cooked through.

Add the Broccoli: Stir in the broccoli florets and sauté for an additional 3-4 minutes. If using frozen broccoli, thaw and drain any excess water before adding it to the skillet, and cook until heated through.

Create the Sauce: Pour in the chicken broth and ranch dressing. Stir well to combine all the flavors. Bring the mixture to a gentle simmer and cook for another 2-3 minutes, allowing the sauce to thicken slightly.

Melt the Cheese: Reduce the heat to low and fold in the shredded cheddar cheese until it melts and becomes creamy, creating a cheesy coating over the chicken and broccoli.

Serve: Taste and adjust the seasoning if necessary. Remove from heat, sprinkle additional cheddar cheese on top if desired, and let it melt slightly. Serve hot directly from the skillet for a delicious one-pan meal!
