Cheesy Sausage and Egg Breakfast Casserole

8 large eggs

1 cup milk

1 pound breakfast sausage (mild or spicy, your choice)

1 cup shredded cheddar cheese

1 cup shredded mozzarella cheese

1 cup diced bell peppers (red, green, or a mix)

1 cup diced onions

4 slices of whole-grain bread, cubed

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

Optional: chopped green onions for garnish

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Cook the Sausage: In a skillet over medium heat, cook the breakfast sausage until it's browned and fully cooked, breaking it apart with a wooden spoon as it cooks. Drain any excess fat, and set aside.

      Sauté the Vegetables: In the same pan, add diced onions and bell peppers. Sauté for about 4-5 minutes until they are softened. Remove from heat and let cool slightly.

        Prepare the Egg Mixture: In a large mixing bowl, whisk together the eggs and milk until well combined. Add garlic powder, onion powder, salt, and pepper to taste.

          Combine Ingredients: In a greased 9x13 inch baking dish, layer the cubed bread evenly along the bottom. Spread the cooked sausage, sautéed vegetables, and shredded cheeses over the bread cubes.

            Pour Egg Mixture: Pour the egg mixture evenly over the layered ingredients in the baking dish, ensuring all the bread is soaked. Gently push down any floating bread to submerge it in the egg mixture.

              Bake the Casserole: Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes. After 25 minutes, remove the foil and bake for an additional 15-20 minutes, or until the casserole is puffed up, golden brown, and a knife inserted into the center comes out clean.

                Serve: Allow the casserole to cool for about 5-10 minutes before slicing and serving. Garnish with chopped green onions, if desired.
