Cheesy Sausage Breakfast Burritos

1 lb breakfast sausage (spicy or mild, your choice)

6 large eggs

1 cup shredded cheddar cheese

1/2 cup milk

1/4 tsp salt

1/4 tsp black pepper

1/2 tsp garlic powder

1 medium bell pepper, diced (any color)

1 small onion, diced

2 tbsp fresh cilantro, chopped (optional)

4 large flour tortillas (10-inch)

1 tbsp olive oil (for cooking)

Salsa or hot sauce (for serving)

Instructions
 

Cook the Sausage: In a large skillet over medium heat, add the sausage. Cook, breaking it up with a spatula until browned and cooked through, about 5-7 minutes. Drain excess grease and set aside in a bowl.

    Sauté Vegetables: In the same skillet, add olive oil. Sauté the diced bell pepper and onion for 3-4 minutes or until softened. Remove from heat and combine with the cooked sausage. Stir in cilantro (if using).

      Prepare the Egg Mixture: In a medium bowl, whisk together the eggs, milk, salt, pepper, and garlic powder.

        Scramble the Eggs: Pour the egg mixture into the skillet over medium heat. Cook while stirring gently until just set but still creamy, about 3-4 minutes.

          Combine Ingredients: Once the eggs are scrambled, fold in the cheesy sausage mixture until well combined. Allow the cheese to melt slightly.

            Assemble the Burritos: Warm the flour tortillas in the microwave for about 20 seconds to make them pliable. Spoon the cheesy sausage and egg mixture into the center of each tortilla, about 1/4 of the mixture per burrito. Fold the sides over and roll tightly from the bottom to the top.

              Optional - Toast the Burritos: In the same skillet, place the burritos seam-side down and toast for 2-3 minutes on each side until golden brown and crisp.

                Serve: Cut the burritos in half if desired, and serve warm with salsa or hot sauce for dipping.
