2 cups sharp cheddar cheese, shredded

1 cup Gruyère cheese, shredded

2 cups heavy cream

1 cup whole milk

1 tsp garlic powder

1 tsp onion powder

1/2 tsp paprika

Salt and pepper to taste

4 tbsp unsalted butter

1/4 cup fresh chives, chopped (for garnish)

1/2 cup panko breadcrumbs (optional, for crunch)

Instructions
 

Preheat the oven: Preheat your oven to 375°F (190°C).

    Prepare the baking dish: Grease a 9x13 inch baking dish with butter to prevent sticking.

      Layer the potatoes: Begin by layering 1/3 of the sliced potatoes evenly on the bottom of the prepared dish.

        Make the cheese sauce: In a saucepan, combine the heavy cream, whole milk, garlic powder, onion powder, paprika, salt, and pepper. Heat over medium-low until warmed through.

          Add cheese: Stir in 1 cup of sharp cheddar cheese and 1/2 cup of Gruyère cheese into the cream mixture until melted and smooth.

            Assemble the dish: Pour a third of the cheese sauce over the first layer of potatoes. Sprinkle with a bit of the remaining cheese mixture. Repeat the layering process two more times: potatoes, cheese sauce, and cheeses. End with a final layer of potatoes.

              Final touch: Pour any remaining cheese sauce over the top layer of potatoes. If desired, sprinkle panko breadcrumbs on top for added crunch. Dot the top with small pieces of butter.
