8 oz (225g) penne pasta

2 cups fresh spinach, chopped

1 cup mushrooms, sliced (cremini or button)

1 small onion, diced

2 cloves garlic, minced

1 cup ricotta cheese

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

2 cups marinara sauce

1 teaspoon dried oregano

1 teaspoon dried basil

Salt and pepper, to taste

2 tablespoons olive oil

Fresh basil or parsley, for garnish (optional)

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Cook the Pasta: In a large pot, bring salted water to a boil. Add the penne pasta and cook according to package instructions until al dente. Drain and set aside.

      Sauté the Vegetables: In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes. Add the minced garlic and sliced mushrooms, and cook until the mushrooms have released their moisture and are golden brown, about 5-6 minutes. Stir in the chopped spinach and cook until wilted. Season with salt, pepper, oregano, and basil. Give it a good stir and remove from heat.

        Mix the Cheesy Filling: In a large mixing bowl, combine the cooked pasta, sautéed vegetables, ricotta cheese, 1/2 cup of the mozzarella cheese, and 1/4 cup of the Parmesan cheese. Pour in the marinara sauce and mix everything until well combined.

          Assemble the Bake: Transfer the pasta mixture into a greased 9x13 inch (or similar size) baking dish. Spread it out evenly. Top with remaining mozzarella and Parmesan cheese.
