Cheesy Spinach Stuffed Shells

12 jumbo pasta shells

1 cup ricotta cheese

1 cup shredded mozzarella cheese, divided

½ cup grated Parmesan cheese

1 cup fresh spinach, chopped

2 cloves garlic, minced

1 egg, beaten

½ teaspoon salt

½ teaspoon black pepper

½ teaspoon red pepper flakes (optional)

2 cups marinara sauce

Fresh basil leaves for garnish

Instructions
 

Preheat your oven to 375°F (190°C).

    Cook the pasta shells: In a large pot of boiling salted water, cook the jumbo pasta shells according to the package instructions until al dente. Drain and set aside to cool.

      Prepare the filling: In a large mixing bowl, combine the ricotta cheese, ½ cup mozzarella cheese, Parmesan cheese, chopped spinach, minced garlic, beaten egg, salt, pepper, and red pepper flakes (if using). Mix well until fully incorporated.

        Stuff the shells: Using a spoon or a piping bag, fill each cooked pasta shell generously with the spinach and cheese mixture.

          Assemble the dish: Pour 1 cup of marinara sauce at the bottom of a baking dish. Arrange the stuffed pasta shells on top of the sauce. Pour the remaining marinara sauce over the shells and sprinkle the remaining ½ cup of mozzarella cheese on top.

            Bake: Cover the dish with aluminum foil and bake in the preheated oven for about 25 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden brown.

              Garnish and serve: Once baked, let the dish cool slightly. Garnish with fresh basil leaves before serving.
