4 large flour tortillas

2 cups fresh spinach, chopped

1 cup ricotta cheese

1 cup mozzarella cheese, shredded

1/2 cup cream cheese, softened

1/2 teaspoon garlic powder

1/4 teaspoon red pepper flakes (optional)

Salt and pepper to taste

2 tablespoons olive oil

Fresh basil leaves for garnish (optional)

Prepare the Spinach Mixture: In a large mixing bowl, combine the chopped spinach, ricotta cheese, 3/4 cup of mozzarella cheese, cream cheese, garlic powder, red pepper flakes (if using), and season with salt and pepper. Mix thoroughly until well combined.

    Assemble the Wraps: Lay a tortilla flat on a clean surface. Spoon a generous amount of the spinach mixture onto the center of the tortilla, about 1/3 of the way down. Fold the sides of the tortilla over the filling and then roll it up tightly from the bottom to the top. Repeat with the remaining tortillas and filling.

      Cook the Tortilla Melts: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Carefully place 2 of the prepared tortilla wraps, seam side down, onto the skillet. Cook for about 3-4 minutes on one side or until golden brown and crispy. Flip over, adding the remaining olive oil if necessary, and cook for another 3-4 minutes until golden and the cheese has melted.

        Melt the Cheese: Sprinkle the remaining mozzarella cheese on top of the wraps in the skillet. Cover the skillet for an additional 1-2 minutes to help the cheese melt completely.
