2 cups fresh spinach, chopped

1 cup ricotta cheese

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1 teaspoon garlic powder

1/2 teaspoon onion powder

1/4 teaspoon crushed red pepper flakes (optional)

Salt and black pepper, to taste

2 cups all-purpose flour

2 tablespoons baking powder

1 teaspoon salt

2 eggs

1 1/2 cups milk

1/4 cup vegetable oil

Cooking spray or additional oil for the waffle maker

Instructions
 

Prepare the Filling: In a mixing bowl, combine the chopped spinach, ricotta cheese, mozzarella cheese, Parmesan cheese, garlic powder, onion powder, red pepper flakes (if using), and season with salt and black pepper. Mix well until all ingredients are fully combined. Set aside.

    Make the Waffle Batter: In a separate large bowl, whisk together the flour, baking powder, and salt. In another bowl, beat the eggs, then add the milk and vegetable oil. Mix the wet ingredients into the dry ingredients and stir until just combined; some lumps are okay.

      Preheat Waffle Maker: Preheat your waffle maker according to the manufacturer's instructions and lightly grease it with cooking spray or oil.

        Cook the Waffle Pockets: Pour an appropriate amount of waffle batter into the preheated waffle maker (about half of what you would use for a traditional waffle).
