4 large bell peppers (any color)

1 cup cooked quinoa or brown rice

1 cup black beans (canned, rinsed and drained)

1 cup corn (fresh, frozen, or canned)

1 cup diced tomatoes (fresh or canned, with juices)

1 teaspoon cumin powder

1 teaspoon chili powder

½ teaspoon garlic powder

½ teaspoon onion powder

Salt and pepper to taste

1 ½ cups shredded cheese (cheddar, mozzarella, or a blend)

2 tablespoons olive oil

Fresh cilantro or parsley for garnish (optional)

½ cup Greek yogurt or sour cream for serving (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Bell Peppers: Cut the tops off the bell peppers and remove the seeds and membranes. Lightly brush the outside with olive oil and place them in a baking dish upright.

      Make the Filling: In a large bowl, combine the cooked quinoa or brown rice, black beans, corn, diced tomatoes, cumin, chili powder, garlic powder, onion powder, salt, and pepper. Mix well until all ingredients are evenly distributed.

        Add Cheese: Fold in 1 cup of shredded cheese into the filling mixture, reserving the remaining ½ cup for topping.

          Stuff the Peppers: Carefully spoon the filling into each bell pepper, packing it generously but not overly tight.

            Top with Cheese: Sprinkle the remaining ½ cup of shredded cheese evenly over the stuffed peppers.

              Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. After that, remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.

                Garnish and Serve: Once done, remove from the oven and let cool for a few minutes. Garnish with fresh cilantro or parsley if desired. Serve with a dollop of Greek yogurt or sour cream on the side for added creaminess.
