Cheesy Stuffed Bell Peppers – A Healthy Family Favorite!

4 large bell peppers (any color)

1 cup cooked quinoa or brown rice

1 can (15 oz) black beans, rinsed and drained

1 cup corn kernels (fresh, frozen, or canned)

1 cup diced tomatoes (fresh or canned, drained)

1 teaspoon cumin

1 teaspoon paprika

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

1 cup shredded cheddar cheese (or your favorite cheese)

½ cup chopped fresh cilantro (optional)

1 tbsp olive oil

Lime wedges for serving

Instructions
 

Preheat the Oven: Start by preheating your oven to 375°F (190°C).

    Prepare the Peppers: Slice the tops off the bell peppers and remove the seeds and membranes. Lightly brush the outside of the peppers with olive oil and arrange them upright in a baking dish.

      Make the Filling: In a large bowl, combine the cooked quinoa or brown rice, black beans, corn, diced tomatoes, cumin, paprika, garlic powder, onion powder, salt, and pepper. Mix until well combined. Stir in half of the shredded cheese and the chopped cilantro (if using).

        Stuff the Peppers: Spoon the filling mixture into each bell pepper, pressing down gently to ensure they are packed. Top each stuffed pepper with the remaining shredded cheese.

          Bake: Cover the baking dish with aluminum foil and place it in the preheated oven. Bake for 25 minutes. Afterward, remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and the peppers are tender.

            Serve: Remove the stuffed peppers from the oven and let them cool for a few minutes. Serve with lime wedges for an extra zesty kick.
