2 medium zucchinis, grated

1 cup shredded cheddar cheese

1/2 cup cooked and crumbled bacon (about 4-5 slices)

1/2 cup all-purpose flour

2 large eggs

1/4 cup green onions, finely chopped

1 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon paprika

Salt and pepper to taste

Olive oil or vegetable oil for frying

Prepare the Zucchini: Place the grated zucchini in a clean kitchen towel or cheesecloth. Squeeze out as much moisture as possible to prevent the fritters from being soggy. Set aside.

    Mix the Batter: In a large bowl, combine the squeezed zucchini, cheddar cheese, crumbled bacon, flour, eggs, green onions, garlic powder, onion powder, paprika, salt, and pepper. Mix until well combined and a thick batter forms.

      Heat the Oil: In a large skillet, heat about 1/4 inch of oil over medium heat until shimmering. Test the oil by adding a small drop of batter; it should sizzle upon contact.

        Fry the Fritters: Using a tablespoon, drop heaping spoonfuls of the mixture into the hot oil, flattening them slightly with the back of the spoon. Cook the fritters in batches, being careful not to overcrowd the pan. Fry for 3-4 minutes on each side or until golden brown and crispy.
