2 cups grated zucchini (about 2 small zucchinis)

1 cup all-purpose flour

1 cup whole wheat flour

1 teaspoon baking soda

1/2 teaspoon baking powder

1/2 teaspoon salt

1 teaspoon ground cinnamon

1/4 teaspoon nutmeg (optional)

1/2 cup granulated sugar

1/2 cup brown sugar, packed

1/2 cup vegetable oil or melted coconut oil

2 large eggs

1 teaspoon vanilla extract

1 cup semi-sweet chocolate chips

1/2 cup chopped walnuts or pecans (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9x5-inch loaf pan or line it with parchment paper for easy removal.

    Prepare the Zucchini: Grate the zucchini using a box grater or a food processor. Place the grated zucchini in a clean kitchen towel, twist it, and squeeze out any excess moisture. This step helps prevent a soggy bread.

      Mix Dry Ingredients: In a large bowl, whisk together all-purpose flour, whole wheat flour, baking soda, baking powder, salt, ground cinnamon, and nutmeg until well combined.

        Combine Sugars and Wet Ingredients: In another bowl, combine granulated sugar, brown sugar, and oil. Whisk in the eggs and vanilla extract until the mixture is smooth and creamy.
