Ingredients

For the Cookies:

1 cup unsalted butter, softened

1 cup brown sugar, packed

½ cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

3 cups all-purpose flour

1 teaspoon baking powder

1 teaspoon ground cinnamon

½ teaspoon salt

For the Cinnamon Sugar Coating:

½ cup granulated sugar

1 tablespoon ground cinnamon

Instructions

Preheat the Oven:

Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.

      Make the Cookie Dough:

In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy. This should take about 3-4 minutes. You can use an electric mixer on medium speed.

          Add Wet Ingredients:

Beat in the eggs one at a time, ensuring each egg is fully incorporated before adding the next. Then mix in the vanilla extract.

              Combine Dry Ingredients:

In a separate bowl, whisk together the flour, baking powder, ground cinnamon, and salt. Gradually add this dry mixture to the wet ingredients, mixing until just combined. Avoid overmixing for the best texture.

                  Chill the Dough:

Cover the dough with plastic wrap and refrigerate for at least 30 minutes. This helps to enhance the flavors and improves the cookie's chewiness.

                      Prepare the Cinnamon Sugar:

In a small bowl, mix the granulated sugar and ground cinnamon together. Set aside.

                          Form the Cookies:

Once the dough is chilled, scoop out tablespoon-sized portions and roll them into balls. Roll each ball in the cinnamon-sugar mixture until thoroughly coated.

                              Bake:

Place the coated dough balls on the prepared baking sheets, spacing them about 2 inches apart. Flatten each ball slightly with your palm. Bake in the preheated oven for 10-12 minutes, or until the edges are golden brown, but the middles still look slightly soft.

                                  Cool:

Allow the cookies to cool on the baking sheets for about 5 minutes before transferring them to wire racks to cool completely.

                                      Enjoy:

Serve warm and enjoy the chewy, sweet goodness of your churro cookies!
