9 lasagna noodles

2 cups cooked, shredded chicken (rotisserie works great)

2 cups ricotta cheese

1 cup grated Parmesan cheese

2 cups shredded mozzarella cheese

2 cups Alfredo sauce (store-bought or homemade)

2 cloves garlic, minced

1 teaspoon Italian seasoning

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Prep the Oven and Noodles: Preheat your oven to 375°F (190°C). Cook the lasagna noodles in a large pot of salted boiling water until al dente. Drain and rinse under cold water to stop the cooking process. Set aside.

    Mix the Filling: In a large mixing bowl, combine the shredded chicken, ricotta cheese, half of the Parmesan cheese, garlic, Italian seasoning, and salt and pepper to taste. Mix until well combined.

      Assemble the Rolls: Spread ½ cup of Alfredo sauce evenly across the bottom of a 9x13 inch baking dish. Take one lasagna noodle and place a generous amount of the chicken mixture at one end. Roll the noodle tightly around the filling and place it seam-side down in the baking dish. Repeat this process with the remaining noodles and filling.

        Top with Sauce and Cheese: Once all rolls are in the baking dish, pour the remaining Alfredo sauce over the top. Sprinkle with the remaining mozzarella and Parmesan cheese.

          Bake: Cover the dish with aluminum foil and bake for 20 minutes. Remove the foil and bake for an additional 15 minutes, or until the cheese is bubbly and golden brown.

            Garnish and Serve: Remove the lasagna rolls from the oven and let them cool for 5 minutes. Garnish with chopped fresh parsley, then serve warm with extra Alfredo sauce if desired.
