Chicken Bacon Ranch Tater Tot Casserole

Ingredients
  

1 lb (450g) boneless, skinless chicken breasts, diced

1 cup (240ml) ranch dressing

8 strips bacon, cooked and crumbled

2 cups (200g) shredded cheddar cheese

1 cup (150g) frozen corn (optional)

1 cup (150g) frozen peas (optional)

1 (32 oz) bag frozen tater tots

2 tbsp olive oil

1 tsp garlic powder

1 tsp onion powder

1/2 tsp black pepper

1/2 tsp salt

1/4 cup (60ml) green onions, sliced (for garnish)

Instructions
 

Preheat the Oven:

    Preheat your oven to 400°F (200°C).

      Cook the Chicken:

        In a large skillet, heat the olive oil over medium heat. Add the diced chicken breasts, seasoned with garlic powder, onion powder, salt, and pepper. Cook for about 5-7 minutes, or until the chicken is browned and cooked through.

          Combine Ingredients:

            In a large mixing bowl, combine the cooked chicken, ranch dressing, crumbled bacon, corn, peas, and 1 cup of shredded cheddar cheese. Stir until everything is evenly coated.

              Layer the Casserole:

                In a 9x13-inch casserole dish, pour the chicken mixture evenly across the bottom. Layer the frozen tater tots on top of the chicken mixture in a single layer.

                  Bake the Casserole:

                    Place the casserole in the preheated oven and bake for 25-30 minutes, or until the tater tots are golden brown and crispy.

                      Add the Cheese:

                        Remove the casserole from the oven and sprinkle the remaining 1 cup of cheddar cheese on top. Return the casserole to the oven for an additional 5-10 minutes, or until the cheese is melted and bubbly.

                          Garnish and Serve:

                            Once done, remove from the oven and let it cool for a few minutes. Garnish with sliced green onions before serving.
