1 lb boneless, skinless chicken thighs, diced

1 medium onion, chopped

2 carrots, sliced

2 celery stalks, chopped

3 cloves garlic, minced

6 cups chicken broth

1 cup frozen green peas

1 teaspoon dried thyme

1 bay leaf

2 cups all-purpose flour

1 tablespoon baking powder

1 teaspoon salt

1 tablespoon dried parsley

1 cup milk

1/4 cup unsalted butter, melted

Salt and pepper to taste

Fresh parsley for garnish

In a large pot over medium heat, add a splash of oil and sauté the onions, carrots, and celery until softened, about 5-7 minutes. Stir in the minced garlic and cook for another minute until fragrant.

    Add the diced chicken to the pot and season with salt, pepper, and thyme. Sauté until the chicken is lightly browned on all sides, about 5 minutes.

      Pour in the chicken broth and add the bay leaf. Bring the mixture to a boil. Once boiling, reduce the heat and let it simmer for about 15 minutes, allowing the flavors to meld together.

        While the soup is simmering, prepare the dumpling mixture: In a mixing bowl, whisk together the flour, baking powder, salt, and dried parsley. In another bowl, combine the milk and melted butter, then pour it into the dry ingredients. Stir until just combined; the batter should be thick but spoonable.

          Add the frozen peas to the soup and stir well. Then, drop tablespoon-sized dollops of the dumpling batter into the simmering soup. Cover with a lid and let the dumplings steam for about 15 minutes, or until they are fluffy and cooked through. Do not lift the lid while they cook!

            Once the dumplings are ready, remove the bay leaf from the soup. Taste and adjust the seasoning if necessary. Serve hot, garnished with fresh parsley.
