Chicken Fajita Casserole

1 pound boneless, skinless chicken breasts, cubed

2 tablespoons olive oil

1 large onion, thinly sliced

1 red bell pepper, thinly sliced

1 green bell pepper, thinly sliced

3 cloves garlic, minced

1 packet (1 oz) fajita seasoning mix

1 cup corn kernels (fresh or frozen)

1 can (15 oz) black beans, rinsed and drained

1 can (10 oz) diced tomatoes with green chilies

1 cup cooked rice (white or brown)

2 cups shredded cheddar cheese

1 cup salsa

Salt and pepper, to taste

Fresh cilantro, for garnish

Instructions
 

Preheat Oven: Preheat your oven to 350°F (175°C).

    Sauté Chicken: In a large skillet, heat olive oil over medium heat. Add cubed chicken and season with salt and pepper. Cook for about 5-7 minutes until chicken is browned but not fully cooked through.

      Add Vegetables: Add the sliced onion, bell peppers, and minced garlic to the skillet. Cook for an additional 5 minutes until vegetables are tender.

        Mix Ingredients: Stir in the fajita seasoning, corn, black beans, diced tomatoes with green chilies, and cooked rice. Mix until well combined and chicken is cooked through (about 3-5 more minutes).

          Layer in Casserole Dish: Transfer the mixture into a greased 9x13-inch casserole dish. Pour salsa evenly over the top and sprinkle with half of the shredded cheddar cheese.

            Bake: Cover the casserole with aluminum foil and bake in the preheated oven for 25 minutes. After 25 minutes, remove the foil and sprinkle the remaining cheese on top. Bake uncovered for an additional 10 minutes, or until the cheese is bubbling and golden.

              Garnish and Serve: Remove from the oven, let it rest for 5-10 minutes, then garnish with fresh cilantro before slicing into squares and serving.
