Chicken, Mushroom, and Spinach Lasagna

For the Chicken Filling:

2 cups cooked chicken, shredded

2 tablespoons olive oil

1 medium onion, finely chopped

3 cloves garlic, minced

8 ounces mushrooms, sliced (such as cremini or button)

4 cups fresh spinach

1 teaspoon dried oregano

1 teaspoon dried basil

Salt and pepper to taste

For the Ricotta Mixture:

15 ounces ricotta cheese

1 large egg

1 cup grated Parmesan cheese

1 teaspoon dried parsley

Salt to taste

For the Lasagna Assembly:

9-12 lasagna noodles (no-boil or regular, cooked according to package directions)

3 cups marinara sauce (store-bought or homemade)

2 cups shredded mozzarella cheese

Additional grated Parmesan for topping

Instructions
 

Prepare the Chicken Filling:

    - In a large skillet, heat olive oil over medium heat. Add onions and sauté until translucent.

      - Add minced garlic and sliced mushrooms. Cook until mushrooms are tender, about 5-7 minutes.

        - Stir in the spinach, dried oregano, dried basil, salt, and pepper. Cook until the spinach wilts. Remove from heat and mix in the shredded chicken. Set aside.

          Make the Ricotta Mixture:

            - In a mixing bowl, combine ricotta cheese, egg, Parmesan cheese, dried parsley, and salt. Mix until well combined and smooth.

              Assemble the Lasagna:

                - Preheat your oven to 375°F (190°C).

                  - Spread a thin layer of marinara sauce on the bottom of a 9x13 inch baking dish.

                    - Place a layer of lasagna noodles on top of the sauce.

                      - Spread half of the ricotta mixture over the noodles, followed by half of the chicken and mushroom filling, and a layer of marinara sauce.

                        - Add 1/3 of the mozzarella cheese on top.

                          - Repeat the layers: noodles, ricotta mixture, chicken filling, marinara, and mozzarella until all ingredients are used, finishing with noodles and marinara sauce on top.

                            - Sprinkle with remaining mozzarella cheese and a generous amount of grated Parmesan for a golden finish.

                              Bake the Lasagna:

                                - Cover the baking dish with aluminum foil and bake in the preheated oven for 30 minutes.

                                  - Remove the foil and continue to bake for an additional 15-20 minutes, or until the cheese is bubbling and golden brown.

                                    - Let it rest for 10-15 minutes before slicing for easier serving.

                                      Serve:
