Chicken Parmesan Meatballs

1 lb ground chicken

1 cup breadcrumbs (preferably Italian-style)

1/2 cup grated Parmesan cheese

1/4 cup chopped fresh parsley

1/4 cup milk

1 large egg

3 cloves garlic, minced

1 tsp onion powder

1 tsp Italian seasoning

Salt and pepper to taste

1 cup marinara sauce (store-bought or homemade)

1 cup shredded mozzarella cheese

Fresh basil leaves for garnish (optional)

Preheat Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

    Mix Ingredients: In a large mixing bowl, combine the ground chicken, breadcrumbs, grated Parmesan cheese, parsley, milk, egg, minced garlic, onion powder, Italian seasoning, salt, and pepper. Mix until just combined. Avoid overmixing to ensure tender meatballs.

      Shape Meatballs: Using your hands, scoop out about 2 tablespoons of the mixture and roll it into a ball. Place the meatballs on the prepared baking sheet, spacing them about 1 inch apart. Continue until all mixture is shaped into meatballs.

        Bake Meatballs: Bake the meatballs in the preheated oven for 20 minutes, or until they are cooked through and lightly golden.

          Add Sauce and Cheese: Remove the baking sheet from the oven and spoon marinara sauce over each meatball. Sprinkle shredded mozzarella cheese generously over the top.

            Broil for Perfection: Return the meatballs to the oven and switch to broil mode. Broil for an additional 3-5 minutes, or until the cheese is melted and bubbly. Keep an eye on them to prevent burning.

              Serve: Remove from the oven and let them cool for a minute. Garnish with fresh basil leaves if desired. Serve the meatballs warm, either on their own or with spaghetti, garlic bread, or a salad.
