Ingredients
  

1 lb chicken breasts, cooked and shredded

1 tablespoon vegetable oil

1 medium onion, diced

3 cloves garlic, minced

1 red bell pepper, diced

1 green bell pepper, diced

1 can (14.5 oz) diced tomatoes, with juice

4 cups chicken broth

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) corn, drained

1 tablespoon chili powder

1 teaspoon cumin

1 teaspoon smoked paprika

1/2 teaspoon cayenne pepper (adjust for spice)

Salt and pepper to taste

1 lime, juiced

Fresh cilantro, chopped, for garnish

Tortilla strips (store-bought or homemade)

Optional toppings: avocado slices, shredded cheese, sour cream, jalapeños

Instructions
 

In a large pot, heat the vegetable oil over medium heat. Add the diced onion and sauté until it becomes translucent, about 4-5 minutes.

    Add the minced garlic and cook for another minute, stirring constantly to prevent burning.

      Stir in the red and green bell peppers, cooking for an additional 3-4 minutes until they are tender.

        Add the shredded chicken, diced tomatoes (with juice), chicken broth, black beans, corn, chili powder, cumin, smoked paprika, cayenne pepper, salt, and pepper. Mix well to combine.

          Bring the mixture to a boil, then reduce the heat to low. Let it simmer for about 20-25 minutes to allow the flavors to meld.

            After simmering, stir in the lime juice for a fresh burst of flavor. Taste and adjust seasoning as needed.

              Serve hot, garnished with fresh cilantro and your choice of toppings such as avocado slices, shredded cheese, sour cream, and jalapeños.
