1 cup cornmeal

1 cup all-purpose flour

2 tablespoons sugar

1 tablespoon baking powder

1/2 teaspoon salt

1 cup buttermilk

2 large eggs

1/4 cup melted butter

1 cup shredded cheddar cheese

1/2 cup corn kernels (fresh or canned)

For the Chili:

1 tablespoon olive oil

1 pound ground beef or turkey

1 small onion, diced

2 cloves garlic, minced

1 can (15 oz) kidney beans, drained and rinsed

1 can (15 oz) tomato sauce

2 tablespoons chili powder

1 teaspoon cumin

1 teaspoon smoked paprika

Salt and pepper to taste

For Assembly:

Sliced jalapeños (optional)

Sour cream (for serving)

Fresh cilantro, chopped (for garnish)

Prepare the Cornbread Waffle Batter:

    - In a mixing bowl, whisk together the cornmeal, flour, sugar, baking powder, and salt.

      - In another bowl, combine buttermilk, eggs, and melted butter. Whisk until smooth.

        - Pour the wet ingredients into the dry ingredients and stir until just combined. Gently fold in cheddar cheese and corn kernels.

          Make the Chili:

            - In a large skillet, heat olive oil over medium heat. Add the diced onion and cook until softened, about 5 minutes.

              - Add minced garlic and ground meat to the skillet. Cook until the meat is browned, breaking it apart as it cooks.

                - Stir in kidney beans, tomato sauce, chili powder, cumin, smoked paprika, and a pinch of salt and pepper. Simmer for 20 minutes, stirring occasionally.

                  Cook the Waffles:

                    - Preheat your waffle iron according to the manufacturer's instructions. Grease lightly if needed.
