Chili Cheese Stuffed Peppers

4 large bell peppers (any color)

1 pound ground beef or turkey

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) diced tomatoes with green chilies

1 cup cooked rice (white or brown)

1 cup corn (frozen or canned)

1 tablespoon chili powder

1 teaspoon cumin

1 teaspoon garlic powder

Salt and pepper to taste

1 ½ cups shredded cheddar cheese

¼ cup chopped fresh cilantro (optional, for garnish)

Sour cream (for serving, optional)

Instructions
 

Prepare the Peppers: Preheat your oven to 375°F (190°C). Cut the tops off the bell peppers and remove the seeds and membranes. Lightly grease a baking dish and place the peppers upright in the dish.

    Cook the Filling: In a large skillet over medium heat, brown the ground beef or turkey until fully cooked, about 5–7 minutes. Drain any excess fat.

      Add the Ingredients: Stir in the black beans, diced tomatoes with green chilies, cooked rice, corn, chili powder, cumin, garlic powder, salt, and pepper. Cook for an additional 5 minutes until everything is heated through.

        Stuff the Peppers: Remove the skillet from heat and fold in 1 cup of the shredded cheddar cheese. Carefully spoon the chili mixture into each bell pepper, packing it tightly.

          Bake the Stuffed Peppers: Sprinkle the remaining ½ cup of cheddar cheese on top of the stuffed peppers. Cover the dish with foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10–15 minutes, or until the peppers are tender and the cheese is bubbly and golden.

            Garnish and Serve: Once done, remove from the oven and let cool slightly. Optionally, garnish with chopped fresh cilantro. Serve warm, topped with sour cream if desired.
