Chili Lime Chicken Wings

2 pounds chicken wings

3 tablespoons olive oil

Zest of 2 limes

Juice of 2 limes

3-4 cloves garlic, minced

2 tablespoons honey

1 teaspoon chili powder

1 teaspoon smoked paprika

½ teaspoon cayenne pepper (adjust to taste)

Salt and freshly cracked black pepper, to taste

Fresh cilantro, chopped, for garnish

Lime wedges, for serving

Instructions
 

Prepare the Marinade: In a large bowl, whisk together the olive oil, lime zest, lime juice, minced garlic, honey, chili powder, smoked paprika, cayenne pepper, salt, and black pepper until well combined.

    Marinate the Wings: Add the chicken wings to the bowl with the marinade, ensuring they are evenly coated. Cover and refrigerate for at least 1 hour, ideally overnight for maximum flavor.

      Preheat the Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with aluminum foil for easy cleanup. Place a wire rack on top of the baking sheet.

        Arrange the Wings: Remove marinated wings from the fridge and let them sit at room temperature for about 15 minutes. Arrange the chicken wings on the wire rack in a single layer.

          Bake the Wings: Bake in the preheated oven for 35-40 minutes, turning the wings halfway through, until they are golden brown and crispy. If desired, broil for an additional 2-3 minutes at the end for extra crispiness.

            Finish and Serve: Once cooked, remove from the oven and let them rest for a few minutes. Garnish with fresh cilantro and serve with lime wedges on the side.
