Ingredients

4 cups of watermelon, cubed (seedless if possible)

1/2 red onion, thinly sliced

1 jalapeño, seeds removed and finely chopped

1/4 cup fresh cilantro leaves, chopped

Zest and juice of 2 limes

1 tablespoon olive oil

1/2 teaspoon chili powder

1/4 teaspoon salt (adjust to taste)

1/4 teaspoon black pepper

Optional: Crumbled feta cheese for garnish

Optional: Avocado slices for added creaminess

Instructions

Prepare the Watermelon: Start by cutting the seedless watermelon into bite-sized cubes. If using a whole watermelon, you can cut it in half and scoop out the flesh with a melon baller or knife.

Mix the Dressing: In a small bowl, combine lime zest, lime juice, olive oil, chili powder, salt, and black pepper. Whisk together until well mixed.

Combine Ingredients: In a large bowl, add the cubed watermelon, sliced red onion, chopped jalapeño, and fresh cilantro. Pour the lime dressing over the salad.

Toss the Salad: Gently toss all the ingredients together until the watermelon is evenly coated with the dressing. Be careful not to mash the watermelon.

Chill and Serve: Let the salad sit for about 10-15 minutes to allow the flavors to meld. For added freshness, refrigerate it for a little longer if desired.

Garnish (Optional): Just before serving, add crumbled feta cheese and avocado slices for an extra layer of flavor and texture if you like.

Enjoy: Serve the salad chilled or at room temperature as a refreshing side dish or appetizer garnished with additional cilantro if desired.
