2 large cucumbers, peeled and diced

2 cups low-sodium vegetable broth, chilled

1 cup plain Greek yogurt

1/2 cup freshly squeezed lemon juice (about 4-5 lemons)

2 tablespoons honey or agave syrup (adjust to taste)

1 clove garlic, minced

Salt and freshly ground black pepper to taste

Lemon zest (for garnish)
