Chilled Mediterranean Couscous Salad

Ingredients
  

1 cup whole wheat couscous

1 1/4 cups vegetable broth

1 cup cherry tomatoes, halved

1 cucumber, diced

1 bell pepper (red or yellow), diced

1/2 red onion, finely chopped

1/2 cup Kalamata olives, pitted and sliced

1/4 cup feta cheese, crumbled

1/4 cup fresh parsley, chopped

1/4 cup fresh mint, chopped

3 tablespoons olive oil

2 tablespoons fresh lemon juice

Salt and pepper, to taste

Instructions
 

Cook the couscous: In a medium-sized saucepan, bring the vegetable broth to a boil. Once boiling, remove from heat and stir in the whole wheat couscous. Cover and let it sit for about 5 minutes or until the couscous has absorbed all the liquid. Fluff with a fork and allow it to cool to room temperature.

    Prepare the vegetables: While the couscous is cooling, chop the cherry tomatoes, cucumber, bell pepper, and red onion into bite-sized pieces. Place them in a large mixing bowl.

      Mix in other ingredients: Add the sliced Kalamata olives, crumbled feta cheese, chopped parsley, and mint to the bowl with the vegetables.

        Dress the salad: In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper. Adjust seasoning to taste.

          Combine everything: Once the couscous has cooled, add it to the bowl with the vegetables and dressing. Gently toss everything together until well combined.

            Chill: Cover and refrigerate the salad for at least 30 minutes to allow the flavors to meld.

              Serve: Give the salad a gentle stir before serving, and garnish with additional parsley or mint, if desired. Enjoy chilled!
