Chilled Tomato Basil Soup

6 ripe medium tomatoes, quartered

1 medium cucumber, peeled and diced

1 red bell pepper, chopped

1 small red onion, diced

2 cloves garlic, minced

1 cup fresh basil leaves, packed

2 tablespoons olive oil

1 tablespoon red wine vinegar

Salt and freshly ground pepper to taste

1 cup vegetable or chicken broth (chilled)

Optional garnish: extra basil leaves, cucumber ribbons, or a drizzle of balsamic reduction

Instructions
 

Prepare all the vegetables: Wash and quarter the tomatoes, peel and dice the cucumber, chop the red bell pepper, and dice the red onion.

    In a large mixing bowl, combine the quartered tomatoes, diced cucumber, chopped red bell pepper, minced garlic, and diced red onion. Toss gently to blend.

      Add the fresh basil leaves to the bowl, along with the olive oil, red wine vinegar, salt, and pepper. Using your hands or a spoon, mix until the ingredients are well combined.

        Transfer the mixture to a blender or food processor. Add the chilled vegetable or chicken broth, and blend until smooth and creamy. You can blend to your desired consistency - leave a few chunks if you prefer some texture.

          Taste the soup and adjust seasoning with additional salt or pepper as needed. If the soup is too thick, add a splash more broth or water to thin it out to your liking.

            Chill the soup in the refrigerator for at least 1 hour to allow the flavors to meld.
