1/4 cup red wine vinegar

Juice of 1 lemon

1.5 lbs boneless, skinless chicken breasts, cut into 1-inch cubes

1 tablespoon olive oil (to coat the skewers)

Wooden or metal skewers (if using wooden, soak in water for 30 minutes)

    Marinate the Chicken: Place the cubed chicken breasts in a large zip-top bag or a mixing bowl and pour the remaining chimichurri marinade over the chicken. Ensure all pieces are well coated. Seal the bag or cover the bowl and marinate in the refrigerator for at least 1 hour (up to overnight for more flavor).

      Prepare the Skewers: If using wooden skewers, soak them in water for 30 minutes to prevent burning. If using metal skewers, ensure they're clean and ready for use. Preheat your grill to medium-high heat.
