1 lb boneless, skinless chicken breasts

1 cup plain Greek yogurt

2 tablespoons chipotle peppers in adobo sauce (finely chopped, adjust for spice)

1 tablespoon lime juice

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

Salt and pepper to taste

4 large flour tortillas

1 cup cooked rice (white or brown)

1 can black beans (15 oz), drained and rinsed

1 cup corn (fresh, frozen, or canned)

1 cup shredded cheddar cheese

1 avocado, sliced

Fresh cilantro, chopped (for garnish)

Extra lime wedges (for serving)

Instructions
 

Marinate the Chicken: In a medium bowl, mix the Greek yogurt, chipotle peppers, lime juice, garlic powder, onion powder, smoked paprika, salt, and pepper to create the marinade. Add the chicken breasts, making sure they are well coated. Cover and let marinate in the refrigerator for at least 30 minutes (up to 2 hours for more flavor).

    Grill the Chicken: Preheat your grill or grill pan over medium-high heat. Remove the chicken from the marinade and grill for 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C). Once cooked, let the chicken rest for a few minutes before slicing it into strips.

      Prepare the Filling: In a large bowl, combine the cooked rice, black beans, corn, and shredded cheddar cheese. Mix well to combine.

        Assemble the Burrito: Warm the flour tortillas in a skillet or microwave to make them more pliable. Place a portion of the rice and bean mixture in the center of each tortilla, followed by some grilled chicken slices and a few avocado slices. Sprinkle with chopped cilantro.
