Chocolate Cherry Cheesecake Recipe with Chocolate Chips

1 ½ cups chocolate cookie crumbs

½ cup unsalted butter, melted

2 tablespoons sugar

16 oz cream cheese, softened

¾ cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

1 cup sour cream

⅔ cup fresh cherries, pitted and chopped

½ cup chocolate chips (semi-sweet or dark, according to preference)

For the cherry topping:

1 cup fresh or frozen cherries

¼ cup sugar

1 tablespoon cornstarch

1 teaspoon lemon juice

Preheat the oven: Preheat your oven to 325°F (160°C).

    Prepare the crust: In a medium bowl, combine chocolate cookie crumbs, melted butter, and sugar. Mix until well combined. Press the mixture firmly into the bottom of a 9-inch springform pan to form an even layer. Bake for 10 minutes, then remove and set aside to cool.

      Make the cheesecake filling: In a mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy. Gradually add the sugar, continuing to beat until well combined. Add the eggs one at a time, mixing until just incorporated. Stir in the vanilla extract and sour cream until smooth.
