3 ripe bananas, mashed

1/3 cup melted coconut oil (or unsalted butter)

1 large egg

1 teaspoon vanilla extract

1 teaspoon baking soda

Pinch of salt

3/4 cup sugar (brown sugar for a richer flavor)

1 1/2 cups all-purpose flour

1 cup semi-sweet chocolate chips

1/2 cup chopped walnuts or pecans (optional)

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a 12-cup muffin pan with paper liners or grease with cooking spray.
