Ingredients

1 ¾ cups all-purpose flour

½ cup granulated sugar

½ cup packed brown sugar

1 teaspoon baking soda

½ teaspoon baking powder

½ teaspoon salt

1 teaspoon ground cinnamon

1 cup ripe mashed bananas (about 2-3 bananas)

½ cup plain Greek yogurt

¼ cup melted coconut oil (or vegetable oil)

2 large eggs

1 teaspoon vanilla extract

½ cup semi-sweet chocolate chips

½ cup chopped nuts (walnuts or pecans)

½ cup diced fresh strawberries

½ cup diced pineapple (canned or fresh)

Whipped cream (for serving, optional)

Maraschino cherries (for garnish, optional)

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C) and line a 12-cup muffin tin with paper liners or spray with non-stick cooking spray.

Mix Dry Ingredients: In a large mixing bowl, whisk together the flour, granulated sugar, brown sugar, baking soda, baking powder, salt, and cinnamon until well combined.

Combine Wet Ingredients: In another bowl, mix the mashed bananas, Greek yogurt, melted coconut oil, eggs, and vanilla extract until smooth and well incorporated.

Combine Mixtures: Pour the wet ingredients into the dry ingredients and stir gently until just combined. Do not overmix; a few lumps are fine.

Fold in Add-ins: Gently fold in the chocolate chips, chopped nuts, diced strawberries, and diced pineapple until evenly distributed throughout the batter.

Fill Muffin Tin: Divide the batter evenly among the muffin cups, filling each about ¾ full.

Bake: Place the muffin tin in the preheated oven and bake for 18-20 minutes, or until a toothpick inserted in the center of a muffin comes out clean.

Cool: Allow the muffins to cool in the tin for about 5 minutes, then transfer them to a wire rack to cool completely.

Serve: If desired, top each muffin with a dollop of whipped cream and a maraschino cherry before serving for the ultimate banana split experience!
