Chocolate Chip Pumpkin Muffins

1 cup pure pumpkin puree (canned or fresh)

1/2 cup vegetable oil

2 large eggs

1 cup brown sugar, packed

1/2 cup granulated sugar

1 teaspoon vanilla extract

1 1/2 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon baking powder

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/2 teaspoon ground ginger

1/2 teaspoon salt

1 cup semi-sweet chocolate chips

Optional: 1/2 cup chopped walnuts or pecans

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or grease it lightly with cooking spray.

    Mix Wet Ingredients: In a large mixing bowl, combine the pumpkin puree, vegetable oil, brown sugar, granulated sugar, eggs, and vanilla extract. Whisk together until the mixture is smooth and well blended.

      Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, ginger, and salt until evenly mixed.

        Combine Wet and Dry Ingredients: Gradually add the dry mixture to the wet mixture. Stir gently with a spatula until just combined, being careful not to overmix. The batter should be thick and slightly lumpy.

          Fold in Chocolate Chips: Gently fold in the semi-sweet chocolate chips and, if using, the chopped nuts.

            Fill Muffin Tin: Spoon the batter evenly into the prepared muffin tin, filling each cup about 2/3 full.
