For the crust:

1 ½ cups graham cracker crumbs

½ cup granulated sugar

½ cup unsalted butter, melted

For the cheesecake filling:

16 oz cream cheese, softened

½ cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

½ cup sour cream

1 cup fresh strawberries, chopped

For the chocolate topping:

8 oz semi-sweet chocolate, chopped

1 tablespoon coconut oil or vegetable oil

Additional fresh strawberries, for decoration (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 325°F (165°C). Line a 9x9 inch baking pan with parchment paper, leaving some overhang for easy removal later.

    Prepare the Crust: In a medium bowl, mix the graham cracker crumbs, sugar, and melted butter until evenly combined. Press the mixture firmly into the bottom of the prepared pan to create an even layer. Bake for about 10 minutes, then let it cool while you prepare the filling.

      Make the Cheesecake Filling: In a large mixing bowl, beat the softened cream cheese and granulated sugar with an electric mixer until smooth and creamy. Add the eggs one at a time, mixing until just combined. Stir in the vanilla and sour cream until smooth. Gently fold in the chopped strawberries.

        Fill the Crust: Pour the cheesecake mixture over the cooled crust, smoothing it out with a spatula. Bake in the preheated oven for 30-35 minutes or until the edges are set and the center has a slight jiggle. Allow it to cool at room temperature for about 1 hour, then transfer to the refrigerator to chill for at least 3 hours, or until completely set.

          Prepare the Chocolate Topping: Once the cheesecake is chilled and firm, melt the chopped chocolate and coconut oil together in a microwave-safe bowl in 30-second intervals, stirring in between, until smooth.

            Assemble the Bars: Once the chocolate is melted, pour it over the chilled cheesecake layer, spreading it evenly. While the chocolate is still wet, you can decorate with additional fresh strawberries on top.

              Chill Again: Place the cheesecake bars back in the fridge for about 30 minutes to allow the chocolate to set completely.
