Ingredients

For the Bars:

1 cup creamy peanut butter

1/2 cup unsweetened cocoa powder

1/2 cup honey or maple syrup

1 1/2 cups rolled oats

1/4 teaspoon salt

1 teaspoon vanilla extract

For the Chocolate Coating:

1 cup dark chocolate chips

1 tablespoon coconut oil (optional, for a smoother finish)

Instructions

Prepare the Base Mixture:

    - In a large mixing bowl, combine the creamy peanut butter, cocoa powder, honey or maple syrup, salt, and vanilla extract. Stir until well combined and smooth.

      Add the Oats:

        - Gradually add the rolled oats to the peanut butter mixture. Use a spatula to fold the oats in until they are evenly mixed and the mixture is thick.

          Shape the Bars:

            - Line an 8-inch square baking dish with parchment paper, leaving some overhang on the sides for easy removal later. Transfer the mixture into the prepared dish and press it down firmly to create an even layer. Make sure it's compact.

              Chill:

                - Place the baking dish in the refrigerator for at least 1 hour, or until the mixture is firm to the touch.

                  Melt the Chocolate:

                    - While the bars are chilling, in a microwave-safe bowl, combine the dark chocolate chips and coconut oil (if using). Heat in the microwave in 30-second intervals, stirring in between, until smooth and fully melted.

                      Dip the Bars:

                        - Once the peanut butter mixture is firm, remove the bars from the refrigerator and lift them out of the dish using the parchment paper. Cut them into even-sized bars (about 12-16 pieces).

                          Coat in Chocolate:

                            - Dip each bar into the melted chocolate, ensuring it's fully coated. Remove any excess chocolate and place the bars on a parchment-lined tray. Repeat this for all bars.

                              Set the Chocolate:

                                - Return the tray to the refrigerator for about 15-20 minutes or until the chocolate coating has set.

                                  Serve:

                                    - Once the chocolate has hardened, your delightful chocolate dipped peanut butter bars are ready to be served! Store any leftovers in an airtight container in the refrigerator for up to a week.
