Ingredients

1 cup dark chocolate (60-70% cocoa), chopped

1/2 cup unsalted butter

1 cup granulated sugar

1/2 cup brown sugar, packed

3 large eggs

1 teaspoon vanilla extract

1 cup all-purpose flour

1/2 cup unsweetened cocoa powder

1/4 teaspoon salt

1/4 teaspoon baking powder

1 cup semi-sweet chocolate chips

1/2 cup chocolate fudge or molten chocolate center

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

Melt the Chocolate and Butter: In a medium saucepan over low heat, melt the chopped dark chocolate and butter together, stirring until smooth. Remove from heat and let it cool slightly.

Mix Sugars and Eggs: In a large mixing bowl, combine the granulated sugar and brown sugar. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.

Combine Chocolate Mixture: Pour the melted chocolate and butter mixture into the egg and sugar mixture, stirring until well combined.

Dry Ingredients: In a separate bowl, whisk together the flour, cocoa powder, salt, and baking powder. Gradually fold this dry mixture into the chocolate mixture until combined.

Add Chocolate Chips: Gently fold in the semi-sweet chocolate chips, making sure they are evenly dispersed throughout the dough.

Shape the Cookies: Using a cookie scoop or tablespoon, drop spoonfuls of dough onto the prepared baking sheet, leaving space between each for spreading. Press your finger into the center of each cookie dough ball to create an indentation.

Fill with Fudge: Place a small teaspoon of chocolate fudge or molten chocolate center into the indentation of each cookie.

Cover with Dough: Take a small amount of cookie dough from the edges and cover the fudge filling, sealing it inside.

Bake: Bake in the preheated oven for 10-12 minutes. The edges should be set, but the centers will still appear soft.

Cool and Serve: Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack. Serve warm and enjoy the gooey chocolate center!
