Chocolate Zucchini Cake

1 cup grated zucchini (about 1 medium zucchini, excess moisture removed)

1 cup granulated sugar

1/2 cup brown sugar, packed

1/2 cup vegetable oil

2 large eggs

1 teaspoon vanilla extract

1 1/2 cups all-purpose flour

1/2 cup unsweetened cocoa powder

1 teaspoon baking soda

1/2 teaspoon baking powder

1/2 teaspoon salt

1 teaspoon ground cinnamon

1/2 cup semi-sweet chocolate chips (optional)

1/2 cup chopped walnuts or pecans (optional)

Powdered sugar for dusting (optional)

Preheat Oven: Preheat your oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan or line it with parchment paper for easier removal.

    Prepare Zucchini: Grate the zucchini using a box grater or food processor. After grating, use a clean kitchen towel to squeeze out excess moisture. Set aside.

      Mix Wet Ingredients: In a large mixing bowl, combine the granulated sugar, brown sugar, and vegetable oil. Mix until well combined. Add the eggs one at a time, mixing well after each addition. Then stir in the vanilla extract.

        Combine Dry Ingredients: In a separate bowl, whisk together the flour, cocoa powder, baking soda, baking powder, salt, and ground cinnamon until fully combined.

          Combine Mixtures: Gradually add the dry ingredients to the wet mixture, stirring until just combined. Avoid overmixing. Gently fold in the grated zucchini, and if using, the chocolate chips and nuts until evenly distributed.

            Bake: Pour the batter into the prepared baking pan, smoothing the top if necessary. Bake in the preheated oven for 25-30 minutes or until a toothpick inserted in the center comes out clean.
