For the Churro Crust:

1 ½ cups all-purpose flour

½ cup unsalted butter, melted

⅓ cup granulated sugar

1 large egg

1 tsp vanilla extract

1 tsp baking powder

½ tsp salt

1 tablespoon ground cinnamon

For the Cheesecake Layer:

16 oz cream cheese, softened

¾ cup granulated sugar

2 large eggs

1 tsp vanilla extract

1 tsp lemon juice

For the Churro Topping:

½ cup granulated sugar

1 tablespoon ground cinnamon

¼ cup unsalted butter, melted (for drizzling)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a 9x9-inch baking pan with parchment paper, allowing some overhang for easy removal after baking.

    Make the Churro Crust:

      - In a medium bowl, mix together the melted butter, sugar, egg, and vanilla extract until well combined.

        - In another bowl, whisk together the flour, baking powder, salt, and ground cinnamon.

          - Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.

            - Press the dough evenly into the bottom of the prepared baking pan. Bake for 10-12 minutes or until lightly golden. Remove from the oven and let it cool slightly.

              Prepare the Cheesecake Layer:

                - In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy.

                  - Add the sugar, eggs, vanilla extract, and lemon juice. Beat until all ingredients are combined and the mixture is smooth.

                    - Pour the cheesecake batter over the cooled churro crust, spreading it evenly.

                      Bake the Cheesecake Bars:

                        - Bake the cheesecake layer for 25-30 minutes, or until the center is set and only slightly jiggles when shaken. Be careful not to overbake!

                          - Once baked, remove from the oven and let it cool completely in the pan on a wire rack.

                            Churro Topping:

                              - While the cheesecake cools, mix together the sugar and ground cinnamon in a small bowl.

                                - Once the cheesecake is cool, drizzle the melted butter over the top, then sprinkle the cinnamon sugar mixture generously over it.

                                  Chill and Cut:

                                    - Chill the entire pan in the refrigerator for at least 2 hours, or overnight for best results.

                                      - Once chilled, lift the bars out of the pan using the parchment paper overhang and cut into bars with a sharp knife. Wipe the knife between cuts for cleaner edges.
