Preheat the Oven: Preheat your oven to 325°F (163°C). Line a 9x9-inch baking pan with parchment paper, leaving some overhang for easy removal.

    Make the Crust: In a medium bowl, mix the graham cracker crumbs, ⅓ cup of sugar, and melted butter until fully combined. Press this mixture firmly into the bottom of the prepared baking pan to form an even layer. Bake in the preheated oven for 8-10 minutes, until lightly golden. Let it cool slightly.

      Prepare the Cheesecake Filling: In a large mixing bowl, beat the softened cream cheese with an electric mixer on medium speed until creamy and smooth. Add ½ cup of sugar, sour cream, and vanilla extract; mix until combined. Add eggs one at a time, mixing on low speed after each addition until just blended.

        Pour and Bake: Pour the cheesecake mixture over the cooled graham cracker crust, spreading it evenly. Bake for 25-30 minutes, or until the center is set (it may still have a slight jiggle, which is fine) and slightly golden around the edges.

          Prepare Churro Topping: While the cheesecake is baking, combine ½ cup of sugar with the cinnamon in a small bowl for the churro topping.
