Ingredients

For the Cheesecake Layer:

16 oz cream cheese, softened

1 cup granulated sugar

1 tsp vanilla extract

2 large eggs

1 cup sour cream

For the Churro Crust and Topping:

1 ½ cups all-purpose flour

1 tsp baking powder

½ tsp salt

½ cup unsalted butter, melted

¾ cup brown sugar, packed

2 tsp cinnamon

1 large egg

For Cinnamon Sugar Coating:

¼ cup granulated sugar

1 tsp cinnamon

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a 9x9 inch baking pan with parchment paper, letting it hang over the sides for easy removal later.

Make the Churro Crust: In a medium bowl, combine the flour, baking powder, and salt. In a large mixing bowl, whisk together the melted butter and brown sugar until smooth. Add the egg and mix until well combined. Gradually stir in the dry ingredients until just incorporated. Press this dough evenly into the bottom of the lined baking pan.

Prepare the Cheesecake Filling: In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth. Gradually add the granulated sugar and mix until creamy. Add the vanilla extract and mix in the eggs one at a time, ensuring each one is fully incorporated. Finally, mix in the sour cream until the mixture is smooth and silky.

Assemble the Bars: Pour the cheesecake mixture over the churro crust, spreading it evenly.

Bake: Bake in the preheated oven for about 30-35 minutes, or until the edges are set and the center is slightly jiggly. Don’t worry if it looks undercooked; it will firm up as it cools.

Cool Down: Let the bars cool at room temperature for about 30 minutes, then refrigerate for at least 2 hours, or until fully chilled.

Make the Cinnamon Sugar Topping: In a small bowl, mix together the granulated sugar and cinnamon.

Serve: Once chilled, lift the cheesecake bars out of the pan using the parchment paper. Cut into squares and generously sprinkle the tops with the cinnamon sugar mixture. Enjoy your delicious Churro Cheesecake Bars!
