Ingredients

3 ripe bananas

1 cup all-purpose flour

1 teaspoon baking powder

½ teaspoon cinnamon

¼ teaspoon salt

1 large egg

½ cup milk (dairy or plant-based)

2 tablespoons sugar

1 teaspoon vanilla extract

Vegetable oil (for frying)

½ cup sugar (for rolling)

2 teaspoons cinnamon (for rolling)

Instructions

Prepare the Banana Mixture: In a large mixing bowl, mash the ripe bananas until smooth. Add the egg, milk, sugar, and vanilla extract, and whisk until well combined.

Combine Dry Ingredients: In a separate bowl, mix together the flour, baking powder, cinnamon, and salt. Stir until evenly mixed.

Combine Wet and Dry Ingredients: Slowly add the dry mixture to the banana mixture, stirring gently until just combined. Avoid overmixing as this can result in dense bites.

Heat Oil: In a deep skillet or pot, heat about 2 inches of vegetable oil over medium heat until shimmering (around 350°F or 175°C).

Fry the Bites: Using a small ice cream scoop or tablespoon, carefully drop spoonfuls of the batter into the hot oil (do this in batches to avoid overcrowding). Fry for about 2-3 minutes per side, or until golden brown. Use a slotted spoon to remove the bites and transfer them to a paper towel-lined plate to drain excess oil.

Prepare Cinnamon Sugar: While the banana bites are still warm, combine sugar and cinnamon in a shallow bowl. Roll each bite in the mixture until fully coated.

Serve and Enjoy: Serve warm with a drizzle of chocolate sauce or dulce de leche for dipping, and enjoy your delicious churro-inspired banana bites!
