Churros with Chocolate Dipping Sauce

Ingredients
  

1 cup water

2 tablespoons granulated sugar

1/2 teaspoon salt

2 tablespoons vegetable oil

1 cup all-purpose flour

2 large eggs

1 teaspoon vanilla extract

1/2 cup granulated sugar (for coating)

1 teaspoon ground cinnamon

Vegetable oil (for frying)

For the Chocolate Dipping Sauce:

1 cup semi-sweet chocolate chips

1/2 cup heavy cream

1 teaspoon vanilla extract

Instructions
 

In a medium saucepan, combine water, 2 tablespoons of sugar, salt, and 2 tablespoons of vegetable oil. Bring to a boil over medium heat.

    Once boiling, remove from the heat and stir in the flour until the mixture forms a ball. Allow it to cool for a few minutes.

      In a large mixing bowl, beat the eggs and vanilla extract together. Gradually add the cooled flour mixture to the egg mixture, beating until smooth and well combined.

        Transfer the churro dough to a piping bag fitted with a large star tip. Set aside.

          In a deep skillet or fryer, heat about 2 inches of vegetable oil to 350°F (175°C).

            Pipe strips of dough into the hot oil, cutting them to your preferred length (about 4-6 inches). Fry a few at a time until golden brown on all sides, about 2-3 minutes.

              Remove the churros with a slotted spoon and drain on paper towels.

                In a shallow dish, mix together 1/2 cup of granulated sugar and 1 teaspoon of ground cinnamon. Roll the warm churros in this mixture until coated.

                  For the chocolate dipping sauce, heat the heavy cream in a small saucepan over medium heat until it begins to simmer.

                    Remove from heat and add the chocolate chips and vanilla extract, stirring until smooth and well combined.

                      Serve the freshly made churros warm with the chocolate sauce for dipping. Enjoy!
