8 oz rice noodles

1/4 cup fresh cilantro, chopped

2 cloves garlic, minced

1/4 cup fresh lime juice (approximately 2 limes)

Zest of 1 lime

3 tbsp soy sauce (or tamari for gluten-free)

2 tbsp sesame oil (or vegetable oil)

1 tbsp honey or maple syrup

1/4 tsp red pepper flakes (adjust to taste)

1/2 cup green onions, sliced

1/2 cup bell pepper, sliced (any color)

1/2 cup cherry tomatoes, halved

Salt and pepper to taste

Optional: crushed peanuts or sesame seeds for garnish

Prepare the Rice Noodles: Cook the rice noodles according to package instructions. Drain, rinse with cold water, and set aside.

    Make the Sauce: In a small bowl, whisk together the lime juice, lime zest, soy sauce, sesame oil, honey (or maple syrup), minced garlic, and red pepper flakes. Taste and adjust seasoning if necessary (add more honey for sweetness or more lime for acidity).
