Ingredients

For the Cinnamon Roll Base:

1 can (16 oz) refrigerated cinnamon rolls (with icing)

1/4 cup melted butter

1 tsp ground cinnamon

1 tbsp brown sugar

For the Cheesecake Filling:

16 oz cream cheese, softened

1/2 cup granulated sugar

1/4 cup sour cream

2 large eggs

1 tsp vanilla extract

1/2 tsp ground cinnamon

For the Topping:

1 cup powdered sugar

2 tbsp milk

1 tsp vanilla extract

Extra cinnamon (for garnish, optional)

Instructions

Preheat Oven: Preheat your oven to 325°F (163°C). Grease a 9-inch springform pan.

Prepare the Cinnamon Roll Base: Open the can of cinnamon rolls and cut each roll into quarters. In a mixing bowl, combine melted butter, ground cinnamon, and brown sugar. Toss in the quartered cinnamon rolls until evenly coated.

Form the Base: Press the cinnamon roll mixture into the bottom of the springform pan, creating a compact layer. Bake in the preheated oven for about 10 minutes, or until slightly golden. Remove and let cool for a few minutes.

Make the Cheesecake Filling: In a large mixing bowl, beat the softened cream cheese and granulated sugar until smooth. Add sour cream, eggs, vanilla extract, and ground cinnamon. Mix until fully combined and creamy.

Assemble: Pour the cheesecake filling over the baked cinnamon roll base. Spread evenly.

Bake: Place the cheesecake in the oven and bake for about 50-60 minutes, or until the center is set but slightly jiggly. Turn off the oven, crack the door, and let the cheesecake cool in the oven for 1 hour.

Chill: Once cooled, refrigerate the cheesecake for at least 4 hours, preferably overnight, to set properly.

Prepare the Topping: In a small bowl, whisk together the powdered sugar, milk, and vanilla extract until smooth. If needed, add more milk to reach your desired consistency.

Serve: Drizzle the icing over the chilled cheesecake and sprinkle with a little extra cinnamon if desired. Slice and enjoy!
