1 pound beef sirloin, thinly sliced

2 tablespoons olive oil

1 medium onion, finely chopped

2 cloves garlic, minced

8 ounces mushrooms, sliced

1 cup beef broth

1 teaspoon Worcestershire sauce

1 tablespoon Dijon mustard

1 cup sour cream

Salt and pepper to taste

1 tablespoon fresh parsley, chopped (for garnish)

8 ounces egg noodles

Cook the Noodles: Begin by boiling water in a large pot. Add a pinch of salt and cook the egg noodles according to package instructions until al dente. Drain and set aside.

    Sauté the Beef: In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the sliced beef and season with salt and pepper. Cook until browned, about 3-4 minutes. Remove the beef from the skillet and set aside.

      Sauté Onion and Garlic: In the same skillet, add the remaining tablespoon of olive oil. Add the chopped onion and cook until translucent, about 3-5 minutes. Stir in the minced garlic and cook for another minute until fragrant.

        Cook the Mushrooms: Add the sliced mushrooms to the skillet. Cook until they are tender and released their moisture, approximately 5-7 minutes.
